Today sees the start of Fairtrade fortnight which this year features a 24 hour banana event
Go Bananas
from noon on March 6th-March 7th. Here to start you off is a simple
roughie recipe. (Roughies are what to make when you fancy a smoothie
but haven’t got a blender. Or even if you have but can’t be bothered to
wash it up . . . )
Serves 1
Vegetarian
Time: 3-4 minutes
Cost: about 40-50p
1 ripe banana
1 large dollop plain, low fat yoghurt
2 tbsp orange juice, preferably freshly squeezed
A little runny honey to sweeten
A handful of muesli (optional)
Peel and slice the banana into a bowl and mash thoroughly with a fork. Add the yoghurt, orange juice and a little honey to taste (about 1/2 a tsp I suggest). Mash again. That’s it. If you want a bit more crunch add a handful of muesli
TOP TIPS
* To squeeze an orange cut it in half horizontally then press the cut side down on a lemon squeezer and turn it to and fro. (Obviously if the squeezer doesn't have a trough to collect the juice do this over a cup or mug.)
* You can make roughies from other soft fruits such as frozen raspberries or with strawberries
