I don't know anyone who isn't a Nigel Slater fan. His recipes are so deliciously simple - none more so than this unbelievably easy banana ice cream - a perfect way to use up leftover, overripe bananas. Depending on how ripe your bananas are you might want to add a little soft brown sugar or honey
Serves 3-4
Time: 5 minutes + churning/stirring time
Cost: about 40-50p each
3 medium sized, ripe bananas
300g natural yogurt
Soft brown sugar or honey to taste (my addition)
To make the ice cream, peel the bananas, chop them into short chunks and drop into a blender. Pour in the yogurt and blitz until smooth. Add a little brown sugar or honey if the mixture is too tart for you. Pour the mixture into either the bowl of an ice-cream machine and churn till frozen or into a plastic container and put it in the freezer. If you do the latter, give it a good beat every hour, bringing the frozen edges in with the more liquid centre.
